The Swedish setting of A Little Night Music inspired our talented chef at Ali’s Bar to create a light, filling seafood dish to go with the show: the open-faced shrimp sandwich. Open-Faced Shrimp Sandwich
Serves 2
Total time: 40 minutes
Ingredients
3 Tb mayonnaise
3 Tb plain Greek yogurt
3 Tb chopped fresh dill
1 Tb finely chopped yellow onion
Juice of 1 lemon
Dash of hot sauce (optional)
Salt and pepper to taste (about ¼ tsp of each)
1 lb medium shrimp, cooked and peeled
2 slices marbled rye bread (or any dark bread)
1 hardboiled egg
Pickled sweet gherkin
Directions
1. Stir the mayo, Greek yogurt, dill, onion, lemon juice, hot sauce if using, salt and pepper in a bowl large enough to hold the shrimp.
2. Taste and adjust seasoning.
3. Stir in the cooked shrimp and transfer to the fridge for a half an hour.
4. Toast the bread.
5. Slice the egg.
6. Top bread with 1 cup of shrimp, followed by 4 slices of egg, and a sweet pickled gherkin on the side.
7. Serve with chips.
